The company operates a state-of-the-art laboratory spanning 700 square meters, where innovative technical and technological production solutions are developed. Daily experiments are conducted by two technologists and chemists who collaborate closely with the technical office to create new production plants and continuously enhance mixing techniques in conjunction with heat treatments.

Additionally, Tonelli Group holds two international patents related to batch and continuous cooling processes, as well as cream filling and cooking technologies. The company maintains independent production capabilities through its two metal carpentries, staffed by specialized welders skilled in steel processing.
